Quick Paneer Egg Roast
Ingredients:
- Onions : 5-6 (medium sized, sliced thinly)
- Tomato : 2 (medium sized, chopped finely)
- Ginger garlic paste : 2tbsp
- Paneer : 1/4th of a bar(250gms approx., cubed into extremely small pieces)
- Hard boiled eggs : 3
- Turmeric Powder : 1/2 tsp
- Chilli Powder : 1 tbsp (add more to make it more spicy)
- Corriander Powder : 1 tbsp
- Black Pepper powder : 1 tbsp
- Garam Masala (All spice mix) : 1/2 tbsp
- Salt to taste.
- Water : less than 1/4th cup (for mixing)
- Oil as required.
- Lime : 1
Method :
- Use a nonstick frying pan. Heat oil in it. Add the onions and saute` till it turns half crispy.
- Add the ginger garlic paste and continue stiring till the smell of the flavour reaches you.
- Add the chopped tomatoes and continue stiring.
- Once tomatoes are done add the cubed paneer to the pan and fry this mixture till the paneer turns golden in color.
- Now add turmeric powder, chilli powder, coriander powder, black pepper powder and salt.
- Stir well. Add a few drops of oil and the water to it so that it mixes up faster.
- Keep on stiring till you can see the oil on the sides of the pan.
- Add the boiled eggs to this and mash them up using the laddle and continue stiring.
- Sprinkle garam masala powder on top.
- Serve warm with a piece of lime. This can be had with chapathis, naans, bread, etc.
P.S: You can make variations of this recipe using different things as chicken, any meat, or eggs alone, or simple add chopped vegetables of your choice. I'v tried it. And its very good!

I ws lazing around at home 1 day...had bunked work nad ws so bored sitting at home...had a long chat with parutty sm time in the noon and I happened to tel her tat I'd be preparing a dish with paneer...before I cud ask her for suggestions, she asked me to try out her panner egg recipe tat had a mention on her blog...checked it out n realized tat all he ingredients wr tr at home....started making the dish...hardly took me ne time to prepare it....the next thing i get to see is an empty dish...tat ws the day my hubby n me overshot our count of rotis....ended up licking our fingers....i made it 4 times within a span of 3 weeks...guys, this is the first recipe I tried frm parus recipe collection...cnt wait to try d others....I recomemend this dish to people who hv very less time in hand and wud like to hv a gud meal, this is the dish for u..... :) Paru, gr8 job!
