Crushed Pepper Chicken

Ingredients:

  1. Boneless Chicken : 1/2 kg (cubed)
  2. Onion : 2 medium ( chopped)
  3. Capsicxum : 1 no. (chopped)
  4. Chopped Ginger : 1 tbsp
  5. Chopped Garlic : 1 tbsp
  6. Ginger paste : 1 tbsp
  7. Garlic paste : 1 tbsp
  8. Maida : 3 tbsp
  9. Cornflour : 3 - 4 tbsp
  10. Egg : 1 nos.
  11. Soya sauce : 2 tbsp
  12. Oyster sauce : 2 tbsp
  13. Roasted red chilli paste : 1 - 2 tbsp
  14. Green chilie : 2 nos. (chopped)
  15. Crushed Pepper corns : 1/2 tbsp
  16. Water : 1 cup
  17. Salt to taste
  18. Sugar : 1 tsp
  19. Oil for deep frying.

Method:

  • Take a bowl and mix together ginger paste, garlic paste, roasted red chilli paste, salt, one egg, maida and 3 tbsp of cornflour. Mix in the boneless chicken pieces into this mixture. Add one or two spoons of water to make a thick paste like consistency of the mixture. Leave this marination for atleast half an hour to 2 hours.
  • After marination is done, heat enough oil in a thick bottomed pan for deep-frying. Drop the marinated chicken pieces into the hot oil one by one. Try to avoid the pieces sticking to each other. Fry till they are golden brown and crisp. (this can be had in this state itself as an appetizer)
  • Use another pan and heat about two tbsps of oil. ( you may use the oil you used for frying) Add the chopped ginger and garlic to it. stir for a few seconds and add the chopped green chilli to it.
  • Now reduce the heat and add the soya sauce and oyster sauce and mix well. Add about a cup of water to this mixture.
  • Now add the crushed pepper, capsicum and onions into this. Stir for about 2 minutes.
  • Now add the salt and sugar.
  • By now the gravy will look watery in consistency. Mix a tbsp of cornflour in some water and add it to the gravy mixture and stir continuously. It will immediately thicken the gravy.
  • Finally add the fried chicken to this thickened gravy and mix well coating all the pieces well.
  • Serve hot with Naans, Bread, Chinese noodles or fried rice!
