Quick and Easy Spicy Egg curry

Ingredients :

  1. Eggs : 4 nos. (hard boiled)
  2. Onions : 3 nos. medium (chopped or sliced)
  3. Tomatoes : 2 nos. medium (cubed)
  4. Ginger Garlic paste : 2 tsp.
  5. Turmeric powder : 1 tsp.
  6. Chilli powder : 1 tbsp. (u can add a little more if u want it to be more spicy!)
  7. Corriander powder : 1 tbsp
  8. Pepper powder : 1 tsp.
  9. Salt as required
  10. Coconut milk : 1/4th cup
  11. Water : 1//2 cup
  12. Oil as required.

Method :

  • Use a nonstick pan. Heat some oil in it and fry the onions for a few minutes.
  • Add the ginger garlic paste and saute' till the smell of the flavour reaches you.
  • Now add the tomatoes and saute' till it becomes soft.
  • Next add the turmeric, chilli, corriander, pepper powder and salt and mix well.
  • Add the water and boil this mixture till it reduces.
  • Now lower the flam and add the coconut milk and bring to a small boil. Add more salt if required.
  • Serve warm with chapathis, parathas, any bread or even rice.

Quick Coconut Burfee

Ingredients:

  1. Coconut : 1 no. grated
  2. Condensed Milk : 1/2 cup
  3. Milk : 1/4th cup
  4. Ghee : 4 - 5 tbsp
  5. Cashew nuts : A few
  6. Pistachios, Almonds : A few

Method :

  • Use a nonstick pan. Heat a teaspoon of ghee on low flame and fry the Cashew nutsm Pistachios and Almonds. After they are done remove them to a side plate.
  • Heat 1 -2 tablespoons of ghee and fry the grated coconut till it turns into a creamy color.
  • Pour the milk and keep stiring .
  • After the milk boils pour the condensed milk into it. Keep stiring.
  • Now add the fried nuts into the mixture.
  • Once the mixture starts to thicken add the rest of the ghee little by little till it starts to leave the sides of the pan.
  • Once the mixture reaches a dough like consistency put out the flame and leave it for cooling.
  • After it cools down you can take bits of the mixture and turn it into a desired shape.
  • Serve after it cools down. Do not put it in the refridgerator.

Quick Paneer Egg Roast

Ingredients:

  1. Onions : 5-6 (medium sized, sliced thinly)
  2. Tomato : 2 (medium sized, chopped finely)
  3. Ginger garlic paste : 2tbsp
  4. Paneer : 1/4th of a bar(250gms approx., cubed into extremely small pieces)
  5. Hard boiled eggs : 3
  6. Turmeric Powder : 1/2 tsp
  7. Chilli Powder : 1 tbsp (add more to make it more spicy)
  8. Corriander Powder : 1 tbsp
  9. Black Pepper powder : 1 tbsp
  10. Garam Masala (All spice mix) : 1/2 tbsp
  11. Salt to taste.
  12. Water : less than 1/4th cup (for mixing)
  13. Oil as required.
  14. Lime : 1

Method :

  • Use a nonstick frying pan. Heat oil in it. Add the onions and saute` till it turns half crispy.
  • Add the ginger garlic paste and continue stiring till the smell of the flavour reaches you.
  • Add the chopped tomatoes and continue stiring.
  • Once tomatoes are done add the cubed paneer to the pan and fry this mixture till the paneer turns golden in color.
  • Now add turmeric powder, chilli powder, coriander powder, black pepper powder and salt.
  • Stir well. Add a few drops of oil and the water to it so that it mixes up faster.
  • Keep on stiring till you can see the oil on the sides of the pan.
  • Add the boiled eggs to this and mash them up using the laddle and continue stiring.
  • Sprinkle garam masala powder on top.
  • Serve warm with a piece of lime. This can be had with chapathis, naans, bread, etc.

P.S: You can make variations of this recipe using different things as chicken, any meat, or eggs alone, or simple add chopped vegetables of your choice. I'v tried it. And its very good!
