Paneer Bhurji

Ingredients:

  1. 2 tbsp oil
  2. 4 tsp chopped garlic
  3. 1 tbsp chopped ginger
  4. 1-2 chopped green chillies
  5. 1 tsp cumin seeds
  6. 2 diced onions
  7. 1/4 tsp ground turmeric
  8. 1/2 tsp chilli powder
  9. 2 tomatoes diced
  10. 400 gm crumbled paneer
  11. 1 diced capsicum
  12. 1 tbsp chopped coriander
  13. 1/2 tsp chat masala salt

Method:

  • Heat oil in large pan. Add the cumin, and then ginger, garlic and chillies.
  • Stir-fry till a little coloured and add onions. Cook onions until soft, stir in turmeric, salt and chilli powder over a fast flame.
  • Add tomatoes and allow juices to evaporate. Lower heat, add paneer, capsicum and coriander and heat through.
  • Sprinkle with chaat masala before serving.
  • Serve with toasted bread or rotis. Makes an excellent breakfast option!
