Fried Onion Rings

Ingredients:

  1. Large sweet onions : 4
  2. Milk : About 1 cup(as required to make the batter) & about 1/4 cup for soaking rings.
  3. Yellow cornmeal : 1 cup
  4. All-purpose flour : 1 cup, sift before measuring.
  5. salt : 1/4 tsp
  6. pepper : 1/8 tsp
  7. melted shortening : 2 tbsp
  8. Egg : 1 nos., beaten
  9. Plain flour : for coating
Method:

  • Peel onions and slice into concentric circles about 1/4-inch thick.
  • Separate the rings and soak in milk for 15 minutes.
  • Meanwhile, mix cornmeal, flour, salt, pepper, melted shortening, egg, and 1 2/3 cups milk to make the batter.
  • Drain the onion rings from the milk and dip in the batter and then in flour for coating.
  • Deep fry onion rings in batches of four for 2 to 3 minutes, or until golden brown.
