Fried Onion Rings
Ingredients:
- Large sweet onions : 4
- Milk : About 1 cup(as required to make the batter) & about 1/4 cup for soaking rings.
- Yellow cornmeal : 1 cup
- All-purpose flour : 1 cup, sift before measuring.
- salt : 1/4 tsp
- pepper : 1/8 tsp
- melted shortening : 2 tbsp
- Egg : 1 nos., beaten
- Plain flour : for coating
- Peel onions and slice into concentric circles about 1/4-inch thick.
- Separate the rings and soak in milk for 15 minutes.
- Meanwhile, mix cornmeal, flour, salt, pepper, melted shortening, egg, and 1 2/3 cups milk to make the batter.
- Drain the onion rings from the milk and dip in the batter and then in flour for coating.
- Deep fry onion rings in batches of four for 2 to 3 minutes, or until golden brown.
