Fish Biryani (from Lakswadeep)
Ingredients:
- 2 cups water
- 1/2 cup coconut milk
- 1 cup raw rice
- 4 pieces of any boneless fish
- 2 tsp coriander powder
- 1/2 tsp red chilli powder
- 1/2 tsp black pepper powder
- salt to taste
- 2 tsp chopped onions
- 2 tsp chopped tomatoes
- 1 tsp coconut oil
Method:
- Place pan on fire. Heat a tablespoonof oil and add chopped onions and chopped tomatoes, coriander powder, red chilli powder, black pepper powder, salt and saute for a little while.
- Add the fish cubes and 1/4th cup water and keep a lid on the vessel for about 10 mins, till fish cooks well and the gravy thickens.
- Simultaneously in a thick bottomed pan add water and coconut milk in the ratio of 2:1 and boil the rice till done.
- Once rice is done, start arranging the rice and fish in layers in a vessel and sprinkle coconut oil over the rice.
- Serve hot on banana leaves for tastiest results.
